Rice & Tomato Mould

1 cup cooked Rice

  • 1 onion – finely chopped
  • 1 cup tomato puree (I use chopped tinned tomato)
  • 2 tbsp cornflour
  • 2 tbsp peanut butter
  • Salt & Pepper to taste

 

Method

  • Mix peanut butter with cornflour, then mix into all other ingredients
  • Butter mould, also paper for top & steam 3 to 4 hours
  • I spray the pudding steamer with oil spray
  • serves 6 people
  • Delicious served cold with Salad
